RECIPE FOR FRUIT CAKE (COOKERY CLASS E8)

Method
Put the sultanas, currants, raisins, sugar, water, cherries, marge and salt into a saucepan, bring to the boil and simmer for 20mins.
Preheat oven to 170 deg C (325F).
Grease and line an 8 inch cake tin.
Add the egg to the cooled fruit, mix and stir well.
Add the flour and mix well.
Turn into the prepared tin, smooth top and arrange almonds on top.
Bake for 1 ¼ to 1 ½ hours until risen and golden brown.
Allow to cool slightly before turning out.

Ingredients
6oz (175g) Demerara sugar, 5oz (150g) Sultanas, 4oz (110g) Currants, 
5oz (150g) Raisins, 10 fl oz (275 ml) Water	,  4oz (110g) Margarine or Butter, 
 3oz (75g) Glace cherries, 10oz (275g) Self raising flour, 
2oz (50g) Blanched almonds, Pinch of salt, 1 Beaten egg.


RECIPE FOR LEMON DRIZZLE CAKE (COOKERY CLASS E14)

Method
Sift the flour and baking powder into a large mixing bowl, add the remaining
 cake ingredients and beat until smooth.
Spoon the mixture into a greased and base-lined 2lb (1kg) loaf tin.
Bake in a preheated oven at 180C, 350F, Gas 4 for 50 minutes or until cooked.
Turn on to a wire tray.
Put the lemon juice and sugar in a saucepan and heat gently until the sugar has dissolved.
While cake is warm, drizzle the syrup over so that it soaks into the cake.

Ingredients

6oz (175g) self-raising flour, 1 teaspoon baking powder, 
6oz (175g) Baking spread  (margarine or softened butter)	
6oz (175g) caster sugar, 3 medium eggs, 2 tablespoons milk,			
Finely grated rind of 2 large Lemons

Lemon syrup,
Juice of 2 large lemons, strained, 4oz (115g) caster sugar
